Javier Plascencia is a simple, warm man who is in the continuous search for flavor. Born in Tijuana, and raised in a hard-working restaurant family, Javier is a person with a natural curiosity about seasoning. This has led him to the adventure of traveling first his region, and later the world, in search of unique ingredients. There are no limits to his culinary vision.

After having studied in San Diego, he opened his first restaurant in Tijuana in 1989, and today he is one of the most prolific entrepreneurs in the region, having various establishments, all with innovative concepts.

Also known as an ambassador, Javier Plascencia is a proud representative of Baja California, which he praises wherever he goes. He is a fervent promoter of local production, from wines and beers to meat from organic farms.

Javier's story continues with his off-kitchen activities. The beautiful locations of the region exert a charm on him, so he takes advantage of any opportunity to enjoy his favorite pastimes outdoors, whether on the beach, the valley or other natural settings in Baja California.

Javier recently earned a Michelin Star for his Animalón restaurant in the Valle.

Javier has been featured in TV shows such as Anthony Bourdain’s “No Reservations” and Netflix’s “Chef ‘s Table”, all of this and more have made him one of Mexico’s most prominent chefs and an ambassador of Mexican cuisine in the world.
